Daniele asked that I bring back some Cretan recipes so here is my first attempt. Rick and I have shopped at a couple of grocery stores in Rethymno and we have been eating, predominately vegetarian. But we passed a butchers the other day and I popped in and bought a chicken breast. Then googled to find a recipe that felt local. This is what I ended up with, condensed to just feed 2.
First I sliced the chicken breast into two thin fillets.
Then marinated, in the frig, for a day in - 1/4cup olive oil (our landlady left us some "from the farm" in coke bottles)
a tablespoon of oregano and 3 cloves of garlic (chopped).
Took it out of the frig for 30 minutes while the oven was heating to 400 degrees.
Half a red onion under and on top of the chicken, in a pyrex dish, marinade brushed over the top. Cook for 30 minutes.
Add a handful of cherry tomatoes (halved), about 2 tablespoons of crumbled feta cheese, a couple of tablespoons of black olives (no pits), juice of one lemon, tablespoon of honey and return to the oven for another 10 minutes.

We had the oven on so made sweet potato fries at the same time. |
Serve with red wine and/or beer. |
